Now this isn’t strictly festive but for me with running around after the kids, going to work and trying to do a million other things I often struggle to think of something quick, easy but not junk food for the kids to eat – well not just the kids but us as well! So let me introduce you to something my Dad used to make when I was a kid! Pizza toast!
9 times out of 10 you will have everything you need to make even the most basic of pizza toast. My Dad used to buy stuff in special for it so there would be salami, garlic sausage etc. But you can literally just use cheese if needed as this is really just a fancy version of cheese on toast but it makes you feel good about yourself especially if you wanted a takeaway but chose this instead!
- bread – I like to use cornbread
- tomato puree
- cheese – any type you like preferably grated
- chorizo or other meats
- other veggies such as mushroom/onion etc
- garlic powder
- chilli flakes
Firstly get your bread and slice it if need be – if slicing it I find making it thicker helps stop it from falling to bits. Then pop it under the grill although you can put it in the toaster you will need the grill afterwards.
In a bowl add your spices you only really need about half a teaspoon of each one then add your chopped meats and veggies (if using) and mix them around to coat them fairly evenly. Now add in your grated cheese.
Once your toast is ready spread generously on one side the tomato puree and top with the cheese mixture. Pop it back under the grill until the cheese has melted and enjoy!
There really is no end to the possibilities of the toppings or even the base you can use. For instance I used to like getting pitta bread and adding turkey bacon, mushrooms, peppers and scrambled egg with cheese in and popping it in the oven for about 7 mins on a medium temperature which made breakfast pizza!
