This week’s Meatless Monday is a staple for me as it doesn’t take too long to prep and cook and that is Asparagus and Feta Risotto. It is a really nice comfort food and a nice change to tomato or parmesan based risotto’s. I remember posting the photo on instagram last year when I first started making it and so many people thanked me for inspiring new flavour combinations which was really nice to hear. I have always wanted to try making my own minestrone but if I’m honest I have always been worried about the idea of the pasta and it going soggy or being hard. But this turned out brilliantly, not to blow my own trumpet but I was so happy with the taste and everything! It is pretty healthy too as there is no fat and other than the root veg and pasta it isn’t carb heavy.
