Lentil Falafel and Tabbouleh – Meatless Monday

Lentil Falafel and Tabbouleh - meatless monday

I have been wanting to retry making falafel since a really bad attempt at a slimming world or weight watchers recipe was dry like cardboard. I also have been wanting to add more lentils in my life and I thought why not! Then I added in extra veggies because you can’t have too many right? This paired with the tabbouleh and of course some hummus was a really nice and light meal to have at work. Read more

Vegan “Cheesy” Pasta – Meatless Monday

Vegan "cheesy" pasta - meatless mondays

So I recently bought some nutritional yeast – I say I did actually 00Steve did because I said it would reduce the amount he spends on cheese that he doesn’t eat himself, which is actually about 90% of the cheese in the house! I wasn’t sure if I would like nutritional yeast but I thought it was only like £3 for a decent sized tub from Holland and Barrett that it didn’t matter as I would find a use for it, I read somewhere a long time ago that you would find it hard to resist just nabbing bits as you go past (a bit like the cheese graters prerogative of eating a chunk once finished) and my goodness they weren’t lying even Ra-Ra likes it! I totally understand the cheesy notes that people are on about when it comes to the nutritional yeast or “nooch” Read more

Chickpea Salad Toasties – Meatless Monday

Chickpea Salad Toastie - Meatless Mondays

I truly adore chickpeas, they are so versatile and incredibly good for you plus they are the main ingredient in hummus and if you know me personally you know that I’m it’s biggest fan TRU DAT! Haha…anyway back to the delightfulness of this toastie! It lasts well and is really tasty plus with a couple of simple swaps it is entirely vegan too! 00Steve was surprised at how much it looked like tuna, but he is fast against chickpeas and hummus (I know how on earth does our marriage work?!) so he won’t try it sadly. But I freaking LOVED it! Read more

Harissa Spiced “Salad” – Meatless Mondays

harissa spiced cous cous salad - meatless monday

Today’s Meatless Monday was a game changer for me and has quickly become a go to meal that is both quick and easy which means it is now a staple for my lunch for work! It is also easier on the waist line than some of my other meals which is clearly a good thing! Cous cous is a fairly light carb that is filling and lends itself to other flavours really well. Stuffed Courgettes – Meatless Monday

stuffed courgette - meatless monday

It has been a little while since I have done a Meatless Monday and the reason still hasn’t changed…I eat pretty much the same thing over and over again! What hasn’t changed is my love of courgettes and I am trying to eat them in different ways rather than falling back on my trusted courgettini and spaghetti mix. Which leads me to stuffed courgette! Potato Pastry Vegetarian Pasties – Meatless Mondays

Potato Pastry Vegetarian Pasties

Today I am going to share The Hairy Bikers sorry Dieters recipe for vegetarian pasties. I have tweaked it slightly by adding some more veggies and omitted the mushroom ketchup as I haven’t got any yet but the recipe in black is theirs and my additions will be in purple! I have enjoyed a lot of the recipes from their diet series and found them relatively easy and everyone who has had them have enjoyed them which is always good rather than people automatically presuming diet food is “rabbit food”. Now I’m not on a diet per se before I get told “there is nothing wrong with you.” But I am just trying to be more mindful of what I eat. I was instantly drawn to this recipe as it is potato pastry and my Grandad used to make an amazing quiche with potato pastry and I had never found a recipe that seemed simple enough to try but this one is! Homemade Salsa and Potato Salad – Meatless Mondays

Homemade Salsa and Potato Salad - Meatless Mondays

Today I thought I would post my two stand by recipes for when I’m attending a barbecue or hosting one alongside my quiche which you can find here. I like to take something with me as I think it is only polite and it started with the potato salad and then the salsa was added. I try to make as many things as I can myself because if I’m honest I don’t have many things I think I’m good at but I like to think I’m fairly okay at cooking – or at least 00Steve thinks so! And since he is the main person I cook for that’s all that matters! Read more

Butternut Squash Carbonara Meatless Mondays

Butternut Squash Carbnonara - Meatless Mondays

I do often find myself looking at vegetables I have in my crisper and trying to think of new things to do with them as I find myself eating the same thing over and over again. This is where Pinterest can come in to play especially when I’m not feeling imaginative; I type in the veggie in question and just look for something that catches my eye. Then it’s a case of turning it veggie which is simple enough and stoma proofing it for *me*; now the key thing is not all recipes can be classed as iron clad stoma proof as we all have different foods we can and can’t eat, so if I have included something you can’t eat do what I do and swap it for something you can! This is how this version of carbonara came about as it is based on this recipe which was based on another recipe! Mine serves a generous portion for one! Read more

Roasted Squash Salad – Meatless Mondays

roasted squash salad - meatless mondays

Sorry for the lack of recipes recently I have been eating the same things or not eating at all as I have gone back onto sertraline and it has taken my appetite with it. If you follow my Instagram you may have seen some of the stories I put up regarding the food I have been eating and this one is by far my favourite and is from Womens Health “Flat Belly Meals”. This is one of the most delectable things I have ever eaten squash in and I like squash! So even though I am fine with most foods I know not everyone is so I have tried to think about ways people could eat these with little or no worries with regards to getting a blockage. Read more
