This week’s Meatless Monday is a staple for me as it doesn’t take too long to prep and cook and that is Asparagus and Feta Risotto. It is a really nice comfort food and a nice change to tomato or parmesan based risotto’s. I remember posting the photo on instagram last year when I first started making it and so many people thanked me for inspiring new flavour combinations which was really nice to hear. Also whenever I read the word risotto I hear my best mate El Husko saying risoootoooe like Ina Garten even though we normally would say it quite abruptly.
- 3/4 asparagus stems preferably thin ones
- 35g feta cheese
- 2 shallots
- 1 garlic clove – minced
- 1/2 cup of arborio rice
- 2 tbsp white wine vinegar
- 1 tbsp lemon juice
- 1 tbsp butter
- 1 veggie stock cube
- 250ml boiling water
- handful of peas (optional)
First you want to boil the kettle and to the stock cube add 250ml of water in a measuring jug.
Next finely dice your shallots and chop your asparagus into chunks about an inch or so long. Melt the butter in a pan along with the shallots and minced garlic on a medium/low heat, stirring regularly to avoid sticking or burning.
Once it has started to cook add the rice and give it a good stir before then adding lemon juice and the white wine vinegar.
Once it has all combined slowly start to add the stock one ladle full (ladleful?) at a time and waiting until the rice has absorbed the liquid before putting the next lot in. This can be quite time consuming but it is how the rice becomes softer, some people like to leave a bit of bite to the risotto rice but I personally am not that keen on al dente foods. I also prefer my risottos a bit saucier so just stop when you have hit your preferences.
When you have added around half of the stock I add in the asparagus and the feta which you can either crumble in or leave fairly chunky which as you eat the risotto gives a burst of salty tang.
Once you have reached your sauce ratio or “rice bite” preferences you can add a handful of peas if you want or leave it as is.
I really enjoy this and find it quite comforting to eat and get at least one of my 5 a day in if I don’t eat the peas. Hopefully you will also enjoy this![.,mailerlite_form form_id=1]
