Autumn Minestrone – Meatless Monday

I have always wanted to try making my own minestrone but if I’m honest I have always been worried about the idea of the pasta and it going soggy or being hard. But this turned out brilliantly, not to blow my own trumpet but I was so happy with the taste and everything! It is pretty healthy too as there is no fat and other than the root veg and pasta it isn’t carb heavy. It is a lovely tomato broth based soup that is easy on your (well mine for sure) digestive system. I am also taking part in “blogtober” which I will talk about later this week!

  • 1 courgette
  • 1 carrot
  • 2 shallots
  • 1/4 butternut squash
  • 1.5 cups small pasta
  • 1 tin of chopped tomatoes
  • 1/2 tsp garlic puree
  • 1 tsp smoked paprika
  • 1 tsp oregano
  • 1 tsp basil
  • 1 veg stock cube
  • 1 tbsp tomato puree

First of all you want to peel and chop up your veggies to a fairly even chunk but really it is preference if you like it chunky or not! Once they are all chopped you want to put them in a decent sized pan, I personally use a large stock pot that my parents got me a couple of years ago.

Now I just covered the vegetables with cold water that came about an inch above them and added in the puree’s, herbs and spices. I gave it a good mix and turned the heat to medium low with the lid on (Top tip! If you don’t have a lid that fits you can get those foil dishes and cut into the edges, then flatten it out. Just go for a larger round one and you are good to go!)

I left the veggies to simmer for half an hour then added in the pasta; which I left to simmer for 10 minutes but you may prefer to have the pasta harder or softer so I suggest just checking to see.Autumn Minestrone

I prefer to add my pepper once it is bowled up but you may want to season your whole soup before but again that it up to you. I topped my minestrone with vegan parmesan which you can find the recipe for in this post.
