I truly adore chickpeas, they are so versatile and incredibly good for you plus they are the main ingredient in hummus and if you know me personally you know that I’m it’s biggest fan TRU DAT! Haha…anyway back to the delightfulness of this toastie! It lasts well and is really tasty plus with a couple of simple swaps it is entirely vegan too! 00Steve was surprised at how much it looked like tuna, but he is fast against chickpeas and hummus (I know how on earth does our marriage work?!) so he won’t try it sadly. But I freaking LOVED it!
- 1 can of chickpeas drained
- 1/2 pepper of your choice
- 1 medium carrot peeled
- 3/4 spring onions
- 1/2 tsp american mustard
- 1 tsp djion mustard
- 1/4 cup mayonnaise
- 1 tsp nutritional yeast
- 1 salad tomato
- 1 tbsp hummus
- 2 slices of bread
So first of all is the real pain in the ass part of this meal but after this it is a doddle I promise! It really is kind of necessary to peel the chickpeas first otherwise they can cause an issue with your stoma, it isn’t often I actually bother with peeling them but it affected the mouth feel of the dish too. If you can get already peeled chickpeas get them! They do it to butter beans so why not chickpeas?
Once you have either peeled or been lucky enough to locate already peeled chickpeas put them into a flat bottomed dish and mash ’em….mash ’em good (10 points if you get the song reference) basically you want them squished enough so you aren’t popping out a whole chickpea because you have inhaled this toastie instead of chewing, but you want it to be chunkyish!
Dice the pepper, carrot and spring onion fairly small and add into the chickpeas. Next you want to add in the mayonnaise (vegannaise anyone?) and mustards then mix thoroughly.
Place your bread into the toaster for as long as you need, we all like our toast different. Whilst it is going to your desired golden crunchiness slice thinly your tomato. Once your toast is done you can slather on your hummus (I used a sweet chilli one in mine but it’s whatever you like) then place the tomato and sprinkle on the nutritional yeast this gives it a cheesy undertone but you can omit that and it is still amazing. Now dollop on your chickpea salad top with the other slice of toast and dig in!
I know some people only believe a toastie is done in a toastie machine and the sides are sealed, I was many years ago one of those people until 00Steve educated me.
