Marmite love it or hate it? I love it or more specifically I have vegemite but it is still pretty much the same thing! This dish is perfect for those who love cheese on toast with marmite as it tastes so similar but with pasta as the carb instead of the bread! I found the original recipe with bacon in a good food magazine I believe awhile back but I have changed things up a bit. It is a fantastic little store cupboard gem for when you don’t have much in or just don’t fancy doing something extravagant. In fact Button loves it! Yeah that’s right my 9 month old baby goes mad for it! Plus the salty, savoury mix is just delicious! .This serves one
- portion of spaghetti (check me out not using courgette for a change)
- 3 tbsp of grated parmesan
- 1/2 tbsp vegemite
- 4/5 brussels sprouts
- 1 shallot
- 2 tsp oil
Boil the kettle and add a little salt to a saucepan with the spaghetti then allow the pasta to cook on the hob.
Slice up the sprouts and the shallot finely either in a processor or by hand. This allows for quicker cooking!
In another saucepan add the oil, sprouts and shallot and gently sautee adding a little pasta water as you go to ensure it doesn’t burn – nobody likes burnt veggies!
Now check your pasta if it is nearly cooked, add the vegemite to the veggies and a little more pasta water to thin it out slightly. Taste as you go obviously and if you feel it needs more vegemite feel free to add it.
Now mix in the grated parmesan or a similar cheese. If you think it looks too thick again add in a small amount of the water then slowly add in the spaghetti incorporating the sauce as you go.
Now serve and enjoy!
