Quinoa and Cheese

There isn’t many people I know that don’t like mac n cheese or it’s variants and this quinoa one is just amazing. Really soft and quinoa is super good for you as it is both a carb and a protein! I also find that just quinoa by itself instead of in the mixes is really easy to digest.

  • 1 cup of plain quinoa – I personally use the dried stuff not the microwave packets
  • 1 stock cube
  • 1/2 cup of cheese
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 tsp paprika
  • water – I eyeball this!
  • you can make this more nutritious by adding pureed butternut squash and a handful of peas – otherwise this is still just comfort food!

I have been making quinoa now for about 4 years or so when I got into a health kick and I really love it. I have played around with how I cook it and feel like I have it perfected now.

So in a pan add your stock cube, quinoa and enough cold water to cover and pop a lid on then turn the heat up to medium. After the water has been simmering for 5-10 mins turn the heat off and keep the lid on.

Next you want to make the cheese sauce. You can do this with water or milk and either way tastes just great. In a pan melt the butter and then add in the flour, paprika and whisk. Allow to cook for a minute so it loses the floury taste, and slowly start to add in the water (or milk if you prefer) just a bit at a time till it forms a sauce rather than a paste and add in the cheese. You may need to thin it out at this point.

Next I pour the quinoa and the cheese sauce into an oven proof dish (only a small one mind) and bake for about 20 mins at around 180 C. This makes a really good side dish or just a comforting dish by itself.
