Here is the first in the using up leftovers from making the salad jars. I love a good fried rice from the Chinese it’s one of the few meals I will have meat in but the quinoa version I don’t need any meat in at all. It’s always a great way to use up any veggies you have lying around in the fridge. This serves one but just increase it as necessary for more people.
- 1 cup leftover quinoa
- 1 egg
- handful peas
- 1-2 shallots
- half a small carrot
- half a bell pepper
- 1 tbsp coconut oil
- 1 tbsp dark soy sauce
- 1/2 tsp Chinese five spice
First you want to chop up your veggies fairly small and put into a frying pan along with the coconut oil. Along with the veggies mentioned above you can add thinly sliced leeks or brussels sprouts or anything else you enjoy to eat. If I had peas in I would have added them hence them being on my ingredients list.
Slowly saute the veggies until they become tender then add in your quinoa. Cook it off for a few minutes before adding the five spice and the soy sauce. If using the leftover quinoa it will already be seasoned but you can add more seasoning to taste such as garlic powder.
Now here comes the “fried” element! crack an egg into the pan and mix it in well then let the egg cook, moving it every so often to prevent it from burning. When all of the egg has cooked it is ready to eat!
