Just wanted to share the recipe Ra-Ra and I created from just a few random ingredients and we thought it was delicious! It was really simple to make and Ra-Ra felt really responsible melting the chocolate. We had never made rocky road before and it was our second fridge bake to date; we were surprised to find it was so easy.
- 300g dark chocolate – we used bournville
- 100g mini marshmallows
- 100g almonds – give these a miss if you can’t have nuts and just double the biscuit
- 5/6 Twix fingers
- 100g digestive biscuits
To make the rocky road you want to break the chocolate up – if it is room temperature it’s perfect for little fingers to break up into a bowl. Once broken up place on top of a pan that has simmering water underneath.
Next is the fun part crushing up the rocky parts of the fridge bake! Roughly crush up the digestive biscuits you don’t want them too small but enough to evenly give a crunch.
Chop up the nuts smaller than the biscuits chunks if you are having them; my ileostomy handles nuts perfectly but I know other people struggle.
Slice up the Twix into roughly about one centimetre in size so the caramel doesn’t get lost in the chocolate. Now stir in the marshamallows, biscuits, Twix and nuts into the chocolate.
In your chosen dish or tin lay some greaseproof paper and then start pouring in your chocolately goodness and leave to set in the fridge for a few hours or overnight. Cut into squares and devour!
