So if you follow my Instagram you will have seen I have been posting meals with Quorn products like these meatballs. Now this is because a lot of people are either cautious or afraid to just dive straight into a visually meatless meal. Quorn is a good source of protein and is great for adding “meat” to your plate which can trick to your mind into not needing the meat.
Sure there are those that feel there is no need for meat replacements and I am on the fence with them as I don’t need them but I also don’t mind them. So with the meatballs I was taken aback with how good they are; and I get fed Polish meatballs a lot but these managed to hold their own.
It was all ready in under 30 minutes too which was handy! But damn it was tasty – oh and props to 00Steve for finding me somewhere in the kitchen I can take nice photos (in the day!) Ingredients for one person are as follows:
- 5 Quorn swedish meatballs
- 3 small chestnut mushrooms
- 2 shallots
- 1/4 courgette
- 1/4 bell pepper
- 1/2 tin chopped tomatoes
- red wine vinegar
- balsamic vinegar
- garlic powder
- smoked paprika
- 1/4 veg stock cube
- pasta – I used spelt
The steps to this are incredibly easy! Pop the “meatballs” into a pan on the hob with a tablespoon of oil and cook for 18 minutes stirring regularly. Whilst they are cooking just chop up the mushrooms, courgette, shallots and pepper into small pieces and stick them in the pan. When the have started to soften add a good splash of both the vinegars (yes it will smell “sweet and sour” as 00Steve put it) then let it simmer and cook off before adding the tomatoes once the 18 minutes are up.
Then you want to cook your pasta and add the paprika, garlic, stock cube and oregano into the sauce and stir. Then it’s just a case of plating up once the pasta is done and top with cheese if you so wish! I added Parmesan onto mine and thoroughly enjoyed it.
