I do often find myself looking at vegetables I have in my crisper and trying to think of new things to do with them as I find myself eating the same thing over and over again. This is where Pinterest can come in to play especially when I’m not feeling imaginative; I type in the veggie in question and just look for something that catches my eye. Then it’s a case of turning it veggie which is simple enough and stoma proofing it for *me*; now the key thing is not all recipes can be classed as iron clad stoma proof as we all have different foods we can and can’t eat, so if I have included something you can’t eat do what I do and swap it for something you can! Quinoa Fried “Rice” – Meatless Mondays

Here is the first in the using up leftovers from making the salad jars. I love a good fried rice from the Chinese it’s one of the few meals I will have meat in but the quinoa version I don’t need any meat in at all. It’s always a great way to use up any veggies you have lying around in the fridge. This serves one but just increase it as necessary for more people. Read more

Vegan Curry – Meatless Mondays

So I get a few comments or raised eyebrows over what I can and can’t eat. I eat predominantly a vegetarian/vegan diet but I do still on occasion eat meat and this is usually limited to white meat. I don’t have this diet for any particular animal rights or even strict dietary requirements. I am not overly keen on red meats, this may have something to do with it irritatating my Ulcerative Colitis but now I just don’t really care for it unless it is in a tomato based pasta dish. I just prefer eating vegetarian foods and because I still have some mild very mild intolerances to dairy I often eat vegan unless it is cheese, cheese has never done me any harm so I won’t give it up!
