I do often find myself looking at vegetables I have in my crisper and trying to think of new things to do with them as I find myself eating the same thing over and over again. This is where Pinterest can come in to play especially when I’m not feeling imaginative; I type in the veggie in question and just look for something that catches my eye. Then it’s a case of turning it veggie which is simple enough and stoma proofing it for *me*; now the key thing is not all recipes can be classed as iron clad stoma proof as we all have different foods we can and can’t eat, so if I have included something you can’t eat do what I do and swap it for something you can! Sorry for the lack of recipes recently I have been eating the same things or not eating at all as I have gone back onto sertraline and it has taken my appetite with it. Here is the first in the using up leftovers from making the salad jars. I love a good fried rice from the Chinese it’s one of the few meals I will have meat in but the quinoa version I don’t need any meat in at all. I LOVE Mexican food and flavours so this little dish hit the nail right on the head! What was even better was that it was one of the “what the heck have I got in the cupboards/fridge” meals! Sometimes I think they often end up being the best sorts of meals and can become family favourites. I tend to find the ingredient that causes these meals to be a win for me is the humble bell pepper.
