I have always wanted to try making my own minestrone but if I’m honest I have always been worried about the idea of the pasta and it going soggy or being hard. But this turned out brilliantly, not to blow my own trumpet but I was so happy with the taste and everything! It is pretty healthy too as there is no fat and other than the root veg and pasta it isn’t carb heavy. So I recently bought some nutritional yeast – I say I did actually 00Steve did because I said it would reduce the amount he spends on cheese that he doesn’t eat himself, which is actually about 90% of the cheese in the house! I wasn’t sure if I would like nutritional yeast but I thought it was only like £3 for a decent sized tub from Holland and Barrett that it didn’t matter as I would find a use for it, I read somewhere a long time ago that you would find it hard to resist just nabbing bits as you go past (a bit like the cheese graters prerogative of eating a chunk once finished) and my goodness they weren’t lying even Ra-Ra likes it! Today I am going to share The Hairy Bikers sorry Dieters recipe for vegetarian pasties. I have tweaked it slightly by adding some more veggies and omitted the mushroom ketchup as I haven’t got any yet but the recipe in black is theirs and my additions will be in purple! I have enjoyed a lot of the recipes from their diet series and found them relatively easy and everyone who has had them have enjoyed them which is always good rather than people automatically presuming diet food is “rabbit food”. Now I’m not on a diet per se before I get told “there is nothing wrong with you.” But I am just trying to be more mindful of what I eat. I was instantly drawn to this recipe as it is potato pastry and my Grandad used to make an amazing quiche with potato pastry and I had never found a recipe that seemed simple enough to try but this one is! Marmite love it or hate it? I love it or more specifically I have vegemite but it is still pretty much the same thing! This dish is perfect for those who love cheese on toast with marmite as it tastes so similar but with pasta as the carb instead of the bread! I found the original recipe with bacon in a good food magazine I believe awhile back but I have changed things up a bit. It is a fantastic little store cupboard gem for when you don’t have much in or just don’t fancy doing something extravagant. In fact Button loves it!
