This weeks meatless Monday is one of my favourite comfort food’s when the weather gets cooler. This chickpea recipe is something I have been eating since just after Ra-Ra was born and I needed something quick and easy but substantial too. You can add chorizo and/or spring greens if you like or can tolerate but I have found it is perfectly fine without! It has little fat content before toppings so is good for a filling meal when you maybe watching your weight. I have always wanted to try making my own minestrone but if I’m honest I have always been worried about the idea of the pasta and it going soggy or being hard. But this turned out brilliantly, not to blow my own trumpet but I was so happy with the taste and everything! It is pretty healthy too as there is no fat and other than the root veg and pasta it isn’t carb heavy. So I recently bought some nutritional yeast – I say I did actually 00Steve did because I said it would reduce the amount he spends on cheese that he doesn’t eat himself, which is actually about 90% of the cheese in the house! I wasn’t sure if I would like nutritional yeast but I thought it was only like £3 for a decent sized tub from Holland and Barrett that it didn’t matter as I would find a use for it, I read somewhere a long time ago that you would find it hard to resist just nabbing bits as you go past (a bit like the cheese graters prerogative of eating a chunk once finished) and my goodness they weren’t lying even Ra-Ra likes it! Vegan Curry – Meatless Mondays

So I get a few comments or raised eyebrows over what I can and can’t eat. I eat predominantly a vegetarian/vegan diet but I do still on occasion eat meat and this is usually limited to white meat. I don’t have this diet for any particular animal rights or even strict dietary requirements. I am not overly keen on red meats, this may have something to do with it irritatating my Ulcerative Colitis but now I just don’t really care for it unless it is in a tomato based pasta dish. I just prefer eating vegetarian foods and because I still have some mild very mild intolerances to dairy I often eat vegan unless it is cheese, cheese has never done me any harm so I won’t give it up!
