Today I am going to share The Hairy Bikers sorry Dieters recipe for vegetarian pasties. I have tweaked it slightly by adding some more veggies and omitted the mushroom ketchup as I haven’t got any yet but the recipe in black is theirs and my additions will be in purple! I have enjoyed a lot of the recipes from their diet series and found them relatively easy and everyone who has had them have enjoyed them which is always good rather than people automatically presuming diet food is “rabbit food”. Now I’m not on a diet per se before I get told “there is nothing wrong with you.” But I am just trying to be more mindful of what I eat. I was instantly drawn to this recipe as it is potato pastry and my Grandad used to make an amazing quiche with potato pastry and I had never found a recipe that seemed simple enough to try but this one is! Again with the courgette pasta I hear you cry! Either in frustration or joy – I am hoping you are crying it with joy. Trust me though I will never stop eating it and if I find a new way to incorporate it into a recipe I will! One day I might venture adding it into cake but you never know!! I personally love a good garden salad and recently have fallen in love with adding in cooled quinoa which makes it a bit more than just a salad! I say garden salad because nowadays there are so many varieties of salad and this is a bit more than just a few sad leaves on a plate.
I have been enjoying recently my version of a sausage egg mcmuffin the McGlory, which is interesting since that isn’t even something I would pick on the breakfast menu! But after a few tweaks I think it is pretty perfect! But I will let you ultimately decide. Read more
This is one of my favourite soups and it is really easy to make! My whole family loves it including Button and you will see his little soup covered mush at the end of the post. Who doesn’t enjoy a tart of some description (ooh er!) but sometimes you just don’t have the energy or time to put in making one from scratch. Not that I know many people who make their own puff pastry! But in a pinch when I can’t be bothered to make my own shortcrust pastry like I do for quiche. I buy puff pastry, chuck some toppings on and stick it in the oven for 15 minutes or so and voila! Quick and easy tea with minimal effort but plenty of taste. Read more
