Chickpea Stew - Meatless Monday

This weeks meatless Monday is one of my favourite comfort food’s when the weather gets cooler. This chickpea recipe is something I have been eating since just after Ra-Ra was born and I needed something quick and easy but substantial too. You can add chorizo and/or spring greens if you like or can tolerate but I have found it is perfectly fine without! It has little fat content before toppings so is good for a filling meal when you maybe watching your weight. This can be vegan, vegetarian, gluten free or with meat but all which ways it really is a delightful party in your mush! Read more

This week’s Meatless Monday is a staple for me as it doesn’t take too long to prep and cook and that is Asparagus and Feta Risotto. It is a really nice comfort food and a nice change to tomato or parmesan based risotto’s. I remember posting the photo on instagram last year when I first started making it and so many people thanked me for inspiring new flavour combinations which was really nice to hear. I have always wanted to try making my own minestrone but if I’m honest I have always been worried about the idea of the pasta and it going soggy or being hard. But this turned out brilliantly, not to blow my own trumpet but I was so happy with the taste and everything! It is pretty healthy too as there is no fat and other than the root veg and pasta it isn’t carb heavy. One of my go to comfort foods has always been cheesy potato bake and before I didn’t just prefer eating vegetarian I would always put in some sliced chorizo between the layers. This is something I eat on its own or makes a great alternative to your standard potato side dish. I’m sure you can easily make it vegan for swapping to non dairy alternatives. I do often find myself looking at vegetables I have in my crisper and trying to think of new things to do with them as I find myself eating the same thing over and over again. This is where Pinterest can come in to play especially when I’m not feeling imaginative; I type in the veggie in question and just look for something that catches my eye. Then it’s a case of turning it veggie which is simple enough and stoma proofing it for *me*; now the key thing is not all recipes can be classed as iron clad stoma proof as we all have different foods we can and can’t eat, so if I have included something you can’t eat do what I do and swap it for something you can! This is how this version of carbonara came about as it is based on this recipe which was based on another recipe! Mine serves a generous portion for one! Read more

Sorry for the lack of recipes recently I have been eating the same things or not eating at all as I have gone back onto sertraline and it has taken my appetite with it. If you follow my Instagram you may have seen some of the stories I put up regarding the food I have been eating and this one is by far my favourite and is from Womens Health “Flat Belly Meals”. This is one of the most delectable things I have ever eaten squash in and I like squash! Marmite love it or hate it? I love it or more specifically I have vegemite but it is still pretty much the same thing! This dish is perfect for those who love cheese on toast with marmite as it tastes so similar but with pasta as the carb instead of the bread! I found the original recipe with bacon in a good food magazine I believe awhile back but I have changed things up a bit. It is a fantastic little store cupboard gem for when you don’t have much in or just don’t fancy doing something extravagant. In fact Button loves it! Again with the courgette pasta I hear you cry! Either in frustration or joy – I am hoping you are crying it with joy. Trust me though I will never stop eating it and if I find a new way to incorporate it into a recipe I will! One day I might venture adding it into cake but you never know!!
