Harissa Spiced “Salad” – Meatless Mondays

harissa spiced cous cous salad - meatless monday

Today’s Meatless Monday was a game changer for me and has quickly become a go to meal that is both quick and easy which means it is now a staple for my lunch for work! It is also easier on the waist line than some of my other meals which is clearly a good thing! Cous cous is a fairly light carb that is filling and lends itself to other flavours really well. Butternut Squash Carbonara Meatless Mondays

Butternut Squash Carbnonara - Meatless Mondays

I do often find myself looking at vegetables I have in my crisper and trying to think of new things to do with them as I find myself eating the same thing over and over again. This is where Pinterest can come in to play especially when I’m not feeling imaginative; I type in the veggie in question and just look for something that catches my eye. Then it’s a case of turning it veggie which is simple enough and stoma proofing it for *me*; now the key thing is not all recipes can be classed as iron clad stoma proof as we all have different foods we can and can’t eat, so if I have included something you can’t eat do what I do and swap it for something you can! This is how this version of carbonara came about as it is based on this recipe which was based on another recipe! Mine serves a generous portion for one! Read more

Roasted Squash Salad – Meatless Mondays

roasted squash salad - meatless mondays

Sorry for the lack of recipes recently I have been eating the same things or not eating at all as I have gone back onto sertraline and it has taken my appetite with it. If you follow my Instagram you may have seen some of the stories I put up regarding the food I have been eating and this one is by far my favourite and is from Womens Health “Flat Belly Meals”. This is one of the most delectable things I have ever eaten squash in and I like squash! So even though I am fine with most foods I know not everyone is so I have tried to think about ways people could eat these with little or no worries with regards to getting a blockage. Read more

Marmite Pasta – Meatless Mondays

marmite (vegemite) pasta - meatless mondays

Marmite love it or hate it? I love it or more specifically I have vegemite but it is still pretty much the same thing! This dish is perfect for those who love cheese on toast with marmite as it tastes so similar but with pasta as the carb instead of the bread! I found the original recipe with bacon in a good food magazine I believe awhile back but I have changed things up a bit. It is a fantastic little store cupboard gem for when you don’t have much in or just don’t fancy doing something extravagant. In fact Button loves it! Yeah that’s right my 9 month old baby goes mad for it! Plus the salty, savoury mix is just delicious! . Read more

Again with the courgette pasta I hear you cry! Either in frustration or joy – I am hoping you are crying it with joy. Trust me though I will never stop eating it and if I find a new way to incorporate it into a recipe I will! One day I might venture adding it into cake but you never know!! But I think we all have something we just can’t stop eating besides it could be waaaaay unhealthier! I would love to know what yours is! Please let me know in the comments. Read more

Quinoa Fried “Rice” – Meatless Mondays

quinoa fried rice - meatless mondays

Here is the first in the using up leftovers from making the salad jars. I love a good fried rice from the Chinese it’s one of the few meals I will have meat in but the quinoa version I don’t need any meat in at all. It’s always a great way to use up any veggies you have lying around in the fridge. This serves one but just increase it as necessary for more people. Read more
