To follow on from my Meatballs and sauce recipe here is my sausage casserole recipe which is pretty much the same as my meat version 00Steve enjoys.
This recipe uses Quorn sausages but you could use any type of sausage if you prefer yep even meat! For the sake of those who have partners or kids who really won’t give up meat I suggest just swapping the veggie options out for the meat ones for example stock cubes. This serves one but just multiply amounts as needed.
Ingredients For The Sausage Casserole:
- 2 sausages
- 1/2 pepper any colour (green not so much)
- 2 shallots
- 2/3 mushrooms depending on size
- 1/2 carrot
- 1 tin chopped tomatoes
- 1/2 tin mixed beans (for 00Steve I just use baked beans)
- 1/2 smoked paprika
- 1/2 ground cumin
- 1 + 1/2 tbsp tomato puree
- 1/2 veg oxo cube
It is relatively quick and easy to do. Chop all your veg if using the mushrooms I suggest chopping them fairly small to help with digestion and reduce the chance of blockages. Sautee the veggies off in a saucepan and put the sausages in. If using meat sausages I remove the skins and then cut the sausage into pieces. As the Quorn ones are frozen I put them in the pan with the veggies and cook them until I can cut them into pieces (I use scissors ha ha) Once your veg has softened even if the sausages cant be cut yet (if you use scissors it doesn’t matter that we are making the sauce! Add the stock cube, tomato puree and spices and give it a good stir round. Add you beans drained unless in a tomato sauce and the tomatoes. Then leave to simmer for 10 minutes. Serve with turnip mash for another vegetable portion and I personally top mine off with cheese which makes everyone in my house happy.
